Quick, Easy & Healthy Vegan Cookie Dough Recipe

Midnight snacking can get the best of us, especially when sweets are involved. Cookie dough is one of those sweets that can sneak its way into just about anything. You can eat it raw, add it to milkshakes or ice cream, or actually bake it. Unfortunately, on top of eating raw eggs, all of that sugar just drains your body in the end. As delicious as it tastes in the moment, it can end up just making you feel worse.

Instead of going for processed, sugary cookie dough, now is the perfect time to make your own. Not just your standard cookie dough recipe, though. A healthy, vegan version of edible cookie dough can still satisfy your sweet tooth, guilt-free.

Many vegan cookie dough recipes use chickpeas to mimic the color and texture of cookie dough, but for some, the flavor is too earthy and overpowering. This recipe follows a different path, focusing on a healthy route to satisfy your sweet tooth.

What you’ll need:

1 tbsp. Coconut oil, melted

1 tbsp. Maple syrup

3 tbsp. Almond flour

¼ tsp. Vanilla extract

Pinch of salt

1 teaspoon vegan chocolate chips

With these healthy swaps, you’ll never look at your classic cookie dough recipe the same. These easy alternatives still keep your edible cookie dough nice and sweet, just without the processed ingredients. If you don’t prefer almond flour, you can instead use coconut or oat flour (easily made by blending oats in a blender or food processor). If you don’t like the taste of maple syrup, but want to keep the recipe vegan, then you can switch that for agave syrup, instead.

Once your ingredients are prepped and measured, the fun can begin. First, in a small bowl, combine your melted coconut oil, maple syrup and vanilla extract. Once well-mixed, add in the flour and pinch of salt until it is blended and has reached your desired consistency. At this point, you can add in your vegan chocolate chips or any other toppings. If you want your dough to stiffen a bit, simply place it in the fridge for 20-30 minutes.
