4 Healthy Breakfast Popsicles to Try this Summer

Have you ever had those days where as soon as you roll out of bed, you just know it needs to be a lazy day? Sometimes our bodies need ample rest, especially in such hectic times. This can be taking a break from even the simplest of routines, such as making breakfast. Especially when you’re exhausted, whipping up a nice, healthy breakfast can feel far too difficult and time consuming. As easy and delicious as a smoothie or some avocado toast can be, it can mean a lot to clean up, too. In comes the frozen french toast sticks and cereal box, right? Wrong. In comes your new favorite summer treat: breakfast popsicles.

Breakfast popsicles are a great way to fill your body with nutrients and antioxidants right when you wake up, and it’s quite possibly the easiest meal prep you can do. With just a few minutes the night before, you’ll have a sweet, cool treat as soon as you’re awake.

Popsicles are no longer just a dessert after dinner. Start your day with these delicious breakfast popsicles to try something new this summer. All you’ll need is your desired ingredients, popsicle molds, and popsicle sticks.

Yogurt Parfait Popsicles

To make these creamy popsicles, combine your favorite yogurt (such as Greek yogurt), dairy-free milk of choice, honey, and berries together. Scoop them into the popsicle mold, layering as desired. Before putting them in the freezer, top the parfait popsicle with your favorite granola, chia seeds, pumpkin seeds, and any other desired “toppings.” Measurements vary based on desired consistency/richness, but a general recipe to follow includes:

1 cup Greek yogurt

½ cup dairy-free milk

½ + berries

2 tbsp. honey

Green Smoothie Popsicles

If you love drinking green smoothies, then you’ll love this recipe. All you need is:

2 cups packed kale leaves

1 cup green grapes

1 cup brewed green tea, cooled to room temperature

1 banana, peeled

1-2 tablespoons honey

About 1 3/4 cups Greek yogurt, divided

Collect all ingredients, leaving the extra ¾ cup of Greek yogurt for later. Blend in a blender until smooth and creamy, then pour into the popsicle molds. Before finishing, take the remaining Greek yogurt and dollop it all throughout your popsicles for a swirled finish.

Cold Brew Mocha Popsicles

Want to skip your morning cup of coffee for something a bit cooler? This cold brew pop is the answer. To make this treat, you’ll need:

2 cups cold brewed coffee

1/4 cup sweetened condensed milk or more to taste (could substitute for a thick, non-dairy milk)

8 Tbsp dark chocolate chips

Mix all ingredients together in a bowl, evenly distributing them into the popsicle molds. For more precise application, feel free to add in the chocolate chips separately.

Spirulina Popsicles

Spirulina is an incredible superfood, making it an incredible breakfast option, too! Its beautiful color makes this the perfect treat for Instagram, and all you’ll need is:

1 1/2 cup plant milk

1/2 cup cashew butter

1/2 cup maple syrup more or less to taste

1/8 cup water

2 tsps lemon juice

2 tsps lime juice

1 tbsp green spirulina powder

Dissolve the spirulina powder in a glass of water, then combine all ingredients in a blender. Blend until smooth and creamy, adjusting the recipe as needed.

Give yourself a healthy treat as soon as you wake up, with little to no effort, with these tasty breakfast popsicles!
